Chicken & Herb Meatballs

These meatballs are so good! This recipe made enough for 2 (with leftovers)



I serve them with zoodles that are coated in olive oil, lemon juice, salt, pepper and crushed garlic. 



2 x chicken breasts

1 x onion

1/2c mashed potato

2 x garlic cloves

1 TSBP dried herbs

1 TBSP tarragon

Salt and pepper



Zucchini's depending on size - 2 or 3



Put chicken, onion, garlic, herbs and seasoning into a food processor and whiz until combined and the chicken is mince like. 

With wet hands (otherwise they're soooo sticky to roll), roll the mix into meatballs. You can use a 1/4c measure to be precise but, boring. Who cares if the balls aren't all uniform. Just get them roughly the same so they cook similarly. 


Fry in coconut oil on all sides to brown. Finish in the oven on 180 for approx 10minutes. 


Stir fry the courgette and coat with remaining ingredients. Serve hot!
