Sticky Lemon Slice
This is to die for!
I’ve adapted the recipe from one I sourced online. Made it a little less sickly sweet and more tangy.
Whilst the ingredients are mostly nutritious it doesn’t mean it’s a free for all. This is still a treat to enjoy once in a while.
Because I can’t trust myself with sweet foods (would’ve thought I could by now, eye roll), whenever I make sweet things I try a slice then either give it away or portion it and put it in the freezer. Otherwise I go to town on it. I take treat yo self to a whole new level. Once it’s frozen Johnny takes a bit for his lunch each day. Although sometimes I even have to give away the frozen pieces because they taunt me! I’m a little bit ridiculous I know but whatever. Do what works I say.
Base
2 Tbsp coconut oil
1 Tbsp maple syrup
1 C shredded coconut
½ C almond flour
Pinch of salt
1 egg white beaten (save the yolk)
Filling
3 eggs
2 yolks
⅓ C maple
⅓ C lemon juice
⅓ C almond flour
1 Tbsp lemon zest
Melt oil, add maple syrup, coconut, salt and almond flour. Mix with egg white until combined. Press into a lined loaf tin and bake at 180 for 20 minutes or until golden. Set aside.
Whilst that is baking…
Beat eggs and yolks until frothy
Add the remaining ingredients and mix to combine
Pour on top of the base and bake for approx 20-30 minutes or until set
Cool completely and slice
