Indulgent Chocolate Brownie
Chewy, sticky, rich, indulgent brownie.
I can’t be trusted with this stuff. One piece for me then it’s in the freezer or out the door.
Johnny wishes I’d bake for him more, but I bet he doesn't wish for me to be the size of a house or that we both have heart disease. So….this is a treat once in a while. Plus who said men can’t bake for themselves? Well actually I did because I’d eat it.
Brownie is the flippin best. It’s so homely and comforting. This one is gluten free and if you’d like it dairy free then grab yourself some dairy free chocolate chips. We ate this batch with our friends after a beef curry. Was so delicious!
250g dark chocolate
8 Tbsp coconut oil
3 eggs beaten
½ C cocoa powder
½ C almond flour
¾ C coconut sugar
¼ tsp baking soda
1 tsp good quality vanilla
Pinch of salt
Melt the chocolate and coconut oil together in a pan
Mix all of the dry ingredients in a bowl (mix them with a whisk to combine)
Add the chocolate mixture and eggs
Stir to combine
Pour into a lined baking tray 11x7 inch and bake at 180 for 20-30 mins or until a toothpick can be inserted and comes out clean.
Leave to cool completely then slice and serve
You can sprinkle sea salt on top to serve if you like. Pink himalayan salt looks pretty.
