Broccoli Sushi

Well, well, well, what do we have here? Healthy sushi which tastes good that's what!


My partner was keen to make sushi so I needed to think of a way I could join in since I'm not keen on eating rice. 


Granted this has been made before but I've never had a go and I didn't follow a recipe. I made it up. Here is what I did.....


Broccoli Rice

Whole head of broccoli

The juice of half a lemon

Half an avocado to bind the broccoli

Salt and pepper


Whiz all of that in a food processor until it resembles rice, if it's too crumbly add more avo. 


Spread this out on your seaweed, add in your filling (I used raw salmon, carrot and more avo), then roll it into a log. Cut and devour with some high quality, gluten free soy sauce and wasabi.
